Summertime Salads!

It’s summer time! The season full of sunshine, pool dates, BBQ’s, vacations, lake time and HOPEFULLY some relaxation thrown in there too! As we transition out of colder weather and heartier meals, I find myself craving salads and lighter meals more in the warmer months. Now that doesn’t mean just some lettuce and grilled chicken thrown on my plate. I love to create macro packed salads, filled with healthy carbs like quinoa, garbanzo beans, sweet potatoes and even fruit! Add in your protein and some healthy fats and you are ready to go!

The very first salad I have to share is the Jennifer Aniston Salad that went VIRAL on TikTok. It is a full meal, packed with protein, carbs and healthy fats. Eating Bird Food recreated it, and it is a MUST try!


This Cobb Salad from Good Housekeeping is a standby in my house and will leave you full and satisfied! I often make this salad on low carb days because it is filled with healthy fats!


Anything Tieghan at Half Baked Harvest makes is a winner in my opinion! I do have to omit dairy in some of her recipes, but the feta in this Sweet Potato Kale Salad is SO good. Go ahead and serve with grilled chicken as well, if you need to bump up your protein!


Broccoli Slaw is a side salad you can bring to any BBQ that is yummy and healthy too! I find a lot of my recipes on Love and Lemons page and this one is a favorite. You could add crumbled bacon too!


Italian Pasta Salad is a fan favorite at all summer parties. I like to make a few adjustments to this salad by using Banza noodles! It incresases my protein and keeps my version gluten free. You can omit the cheese if you’d like! Ahead of Thyme has so many delicious salad recipes it was hard to choose just one!


This Defined Dish Chicken Taragon Salad is easy to throw together and so dang good. Served in lettuce cups or on a toasted slice of sourdough, I promise you will LOVE this salad.
